Pulled Oumph! BBQ Melt Sandwich

Serves 2

Ingredients:

280 g Pulled Oumph!
1 large yellow onion
2 tbsp plant-based margarine for frying
1 dl plant-based mayo
1 tbsp Dijon mustard
1 tbsp HP sauce
4 slices plant-based cheese
1 baguette
A scattering of tomtatoes and salad leaves

Instructions:

Defrost the Pulled Oumph! Peel and slice the onion, and fry in vegetable oil. As soon as the onion starts to brown take the pan off the heat and turn the heat down. Put the pan back on the heat and let the onion continue to fry for at least 10 minutes, but make sure it doesn’t burn.
Fry the Pulled Oumph! on a medium heat.
Mix mayo, mustard and HP sauce in a small bowl. Slice the tomatoes and cut the salad leaves in to strips. Halve the baguette and slice each halv down the middle. Spread mayo mix on each piece of bread. Add a generous amount of onion, tomatoes and Pulled Oumph! and top with cheese. Place in a pre-heated oven on 250 C (gas mark 9) grill setting. As soon as the cheese topping is bubbling, take out of the oven. Add the salad leaves, and put the baguette slices back together and start munching!
