Oumph! Spring Rolls

Ingredients:

1 handful Pulled Oumph!
1 carrot
10 cm cucumber
½ mango
Mixed shoots and sprouts – sunflower shot, pea sprouts, mung beans
Iceberg lettuce or cream salad and leaf spinach
Rice paper

Marinade:
½ red chili, finely chopped
½ dl fresh coriander, chopped
½ lime, zest and juice
1 tbsp. sesame oil
2 tbsp. Japanese soy
1 tbsp. agave syrup
Double the recipe if using for dip!

Instructions:

Mix the marinade. Seed the cucumber and slice into match-sized strips, 10 cm long. A mandolin works really well here! Peel and shred the carrot, like the cucumber. Do the same with the mango. Marinate for at least 30 minutes. Chop the Oumph! into smaller pieces. Heat, the mix Oumph! with the marinated vegetables. Take one rice paper at a time and dip into warm water until it becomes soft, for like 10 seconds. Add iceberg lettuce, Oumph!/vegetable filling and mixed shoots. Fold up the edges and roll into small dolmas. Dip in soy dip and eat immediately. Awesome!
