1 package Oumph! Jerk
2 sweet potatoes
1 red pepper
1 yellow pepper
1 eggplant
1 orange pepper
4 tbsp. oil
2+4 tbsp. maple syrup
2 tsp. lemon juice
2+2 tsp. sambal oelek
1 dl chopped mint
1 dl chopped parsley
1 garlic clove
2 tbsp. pepper powder
2 tsp. dark soy sauce

Set the oven at 200° C. Cut the peeled sweet potatoes, eggplant and paprika into large pieces, 3-4 cm. Mix with 4 tsp. of oil, 2 tbsp. of maple syrup, 2 tsp. of lemon and salt according to taste. Roast in the oven until the sweet potato becomes well-coloured. Remove the dish and let cool off, then mix with 2 tsp. of sambal oelek, mint and parsley. Mix the baby spinach with 2 tsp. of oil. Fry the Oumph! Jerk for a few minutes and then add 4 tbsp. of maple syrup, 2 tsp. of sambal oelek, garlic clove, peppercorn and soy sauce.

Serve in nice hot dog buns. Add garlic dressing and roasted onions if you feel like it. Otherwise, just eat!
